stuffed portobello mushrooms with Bolognese sauce
Portobello mushrooms stuffed with cheese and spinach topped with (vegetarian-ized) bolongaise sauce, na no hana (I have no idea what its called in English, if you do, let me know) as a side dish.
— This dish took only ten minutes to put together. By preparing the sauce the day before, I can have a healthy, light meal in the time it takes to steam the vegetables and cook the mushrooms.

This post reminded me of something I ate at my cousin’s wedding in Sydney, they were serving portobello mushrooms stuffed with some kind of risotto. I remember the first bite so well because it was so good and and all kinds of juicy–so much so that some of it dripped onto my shirt. I was too distracted to notice sooner haha. But I REGRET NOTHING. I’ll try to create that moment in a future post, thanks 🙂

No need to apologise. I’m glad you asked. 🙂
The recipe for Bolognese Sauce with vegetarian and vegan options will be next week. After I’ll post some serving suggestions including lasagne with homemade pasta and the portobello mushrooms in the photograph.

Looks good! Your side dish looks like either Rapini (an Italian broccoli) or a field mustard plant.

The flavour is definitely cruciferous, so it must be Rapini. Thank you much.
